And so.. This is a typical take-to-work lunch. I made my own teriyaki sauce as the store bought ones are not exactly cheap and very salty. Anyway, it isn’t that difficult to make and i always have cooking wine around ~

Recipe is for the Instant Pot, Airfryer or Oven

Serves 2-3 | 10-20 mins

Ingredients

  • 3 pcs skinless & boneless Chicken Thighs or Breast (frozen is ok only if using the IP)
  • 4 Garlic cloves; crushed
  • 2 thin slices of Ginger
  • 1/4 cup Light Soy Sauce (I use less sodium)
  • 1/4 cup Mirin
  • 1/8 cup Sake (can substitute with White Wine)
  • 1/8 cup Water
  • 1/2 tsp Sesame Oil
  • 2 tbsp White Sugar
  • White Sesame Seeds for garnish 
  • 1 tbsp Cornstarch (with 2 tbsp cold water)
  • Parchment Paper or Foil (if using the Airfryer)

Directions (Instant Pot)

  1. Mix Light Soy Sauce, Sake/White Wine, Mirin, Sugar, Sesame Oil, Ginger and Garlic in the pot over a sauté low mode. Let it simmer for 2-3 mins so that the alcohol can cook off. 
  2. Press cancel.
  3. Lay chicken in the pot. You can put a trivet over it to make Jasmine rice in a stainless steel bowl/deep dish. 
  4. Set the IP to manual, high pressure, 5 mins (thigh) or 7 mins (breast). Add an extra min if using frozen. Do a quick release.
  5. Preheat Airfryer or Oven to 360 degree Fahrenheit (180 degree Celcius) or 380 degree Celcius (200 degree Celcius) respectively. 
  6. Set chicken aside. On sauté low mode, add corn flour slurry. 
  7. Glaze sauce on the chicken and Airfry or bake it for 3 mins. 
  8. Garnish with roasted White Sesame seeds. 

Directions (Airfryer/Oven)

  1. Make the sauce by mixing Light Soy Sauce, Sake/White Wine, Mirin, Sugar, Sesame Oil, Ginger and Garlic. Let it simmer for 2-3 mins over a medium low fire so that the alcohol can cook off. You can make big batches and store it in the refrigerator. 
  2. Season chicken with the sauce for at least 1 hour. 
  3. Thicken sauce using corn flour slurry. 
  4. To prevent chicken from getting dry in the oven, I recommend using parchment paper or aluminium foil. Airfryer is fine as long as your cooking time does not get beyond 10 mins. 
  5. Baste the chicken in the sauce. 
  6. Preheat Airfryer or Oven to 360 degree Fahrenheit (180 degree Celcius) or 380 degree Celcius (200 degree Celcius) respectively. 
  7. Airfry or bake the chicken for 7-9 mins or 10-12 mins respectively (thickness affects the cooking time). Thigh has a shorter cooking time. Flip the chicken at half time. 
  8. Garnish with roasted White Sesame seeds. 

Enjoy with white/Jasmine rice!
