A twist to your normal Mac n Cheese. No graininess, just yumminess!

Serves 2 

Cook Time: 

  • 4 mins Instant Pot 
  • 12 mins Stovetop 

Ingredients 

  • 1 1/4 cups of your favorite pasta 
  • 1 Tablespoon Cajun Spice
  • 3/4 Tablespoon All-Purpose Flour
  • 3/4 cup Shredded Cheese Blend (Sharp Cheddar/White Cheddar/American Cheese – your choice!)
  • 1 tbsp Unsalted Butter
  • 2/3 cup Milk
  • 1/4 Red Pepper
  • 1/4 Green Pepper
  • 15 Shrimps

Directions (Instant Pot)

  1. Press Sauté normal and wait for ‘HOT’.
  2. Sauté Butter and Peppers. 
  3. Add pasta and water just enough to cover the pasta. 
  4. Press ‘Manual’, ‘High Pressure’ and set 3 mins. (I find 4 mins too mushy) Do an instant release. 
  5. Mix the Cajun Spice and Flour together while waiting. 
  6. On Sauté less mode, add shrimps and cook for a min or two.
  7. Stir in milk, Cajun spice blend and cheese. 
  8. It is ready when Cheese has all melted.
  9. Serve hot. 

Directions (Stovetop)

  1. Sauté Butter and Peppers in a deep dish pan.
  2. Add pasta. Add just enough water to cover. Cook pasta till 3/4 al-dente, approximately 8-9 mins. 
  3. Add frozen shrimps at 6 mins. 
  4. Stir in milk, Cajun spice blend and cheese. 
  5. It is ready when Cheese has all melted, approximately 3-4 mins.
  6. Serve hot.
