Did you know you can do this entire dish in your Airfryer in 12-14 mins? Most people still think that Airfryers are meant for processed food, and that anything that comes out is dry and crispy. Nawww, you are wrong! Check out this recipe – Pork Chops will be tender and juicy! This dish will give you a touch of Spain too.

Serves 2 | Cooktime <15 mins

Ingredients (Pork Chops)

  • 2 pcs (5oz each/140g) of Pork Chops
  • 1/3 tsp minced Garlic
  • 1/8 tsp Onion powder
  • 1/3 tsp dried Mustard
  • 1/2 tsp Oregano
  • 1/4 tsp Thyme 
  • Pinch of Rosemary 
  • 1/8 tsp Black Pepper
  • 1 tbsp Olive Oil

Ingredients (Romesco Cauliflower)

*Romesco sauce can be pre-made and stored in the refrigerator up to 2 weeks in air tight sealed container or glass bottle. It can be used to cook many other stuff!

  • 1/2 Cauliflower head; florets
  • 1/4 Red Onion
  • 1 tbsp minced Garlic 
  • 2/3 cup roasted Red Pepper; sliced
  • 1 1/2 tbsp chopped Hazelnuts
  • 1 1/4 cup chopped Almonds
  • 1 tbsp crushed Tomato 
  • 1 tsp minced Garlic
  • 1 tbsp Red Wine Vinegar
  • 1/4 tsp Smoked Paprika
  • pinch of Chilli powder 
  • 1/2 tsp Paprika
  • pinch of Salt
  • 2 1/2 tbsp Olive Oil
  • 2-3 sprigs of Parsley 

Garnish 

  • sliced Almonds (optional)

Directions 

  1. Season Pork Chops with all the spices and Olive Oil. Seal in a ziploc bag. Set aside for at least 30 mins (but I prefer to set aside overnight). As usual, I pre-season and dump it in the deep freezer. 
  2. For the Romesco sauce, blend all spices and condiments together (except Cauliflower, Red Onion, part of the minced Garlic and Oil). Add oil slowly when mixture is fully blended.
  3. Preheat Airfryer to 380 degree Fahrenheit or 190 degree Celcius for about 5 mins. 
  4. Make a aluminium foil bowl or you can use the baking tin (no holes). 
  5. Add Romesco sauce, Cauliflower florets, minced Garlic, onions and 1/2 cup water. Coat evenly. Airfry 2-3 mins. 
  6. Lay seasoned Pork Chop on it and Airfry 5-6 mins on each side (browned). Pork Chops are fully cooked when internal temperature reaches 145 degrees Fahrenheit (about 62 degree Celcius).  *in case you wanna use a meat thermometer
  7. Serve hot.
