An accompanying side that is tasty. Black Lentils are really healthy and full of fibre. It helps to lower blood cholesterol, increase energy and a fabulous source of protein! 

Serves 2 | Cook Time: 30 mins 

Ingredients 

  • 1/2 cup Black Lentils 
  • 3/4 cup sweet Corn
  • Home-made Honey Dijon Vinaigrette: 2/3 tbsp Honey, 2 tsp Sherry Vinegar, 1/8 tsp minced Garlic, 1 1/2 tbsp Avocado oil (Olive oil/Safflower oil is fine), 1/3 tsp Dijon 

Directions 

  1. Boil Black Lentils in lightly salted water for about 20 mins (IP: 5 mins/HP/NR). Add sweet Corn and boil for another 5 mins. Drain water. 
  2. Mix all ingredients for Honey Dijon Vinaigrette together.
  3. Mix both the Black Lentils and Corn with the Vinaigrette, pinch of black Pepper and Salt. 
  4. Viola ~
